These Buffalo Chicken Tenders are a delicious and gluten-free twist on a classic favorite. They are coated with almond flour and baked to perfection, then tossed in a spicy buffalo sauce for a flavorful kick.
Ingredients: 1 pound chicken tenders. 1 cup almond flour. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1/2 teaspoon paprika. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 2 large eggs. 1/4 cup hot sauce check for gluten-free. 2 tablespoons butter or ghee. 1 tablespoon coconut oil.
Instructions: Preheat your oven to 400F 200C. In a shallow bowl, mix almond flour, garlic powder, onion powder, paprika, salt, and black pepper. In another bowl, whisk the eggs. Dip each chicken tender into the whisked eggs, then coat with the almond flour mixture. Place on a baking sheet lined with parchment paper. Bake the chicken tenders for 20-25 minutes, or until they are golden brown and cooked through. While the chicken is baking, in a small saucepan, melt the butter and coconut oil over low heat. Remove the saucepan from the heat and stir in the hot sauce. Once the chicken tenders are done, drizzle the buffalo sauce over them, or dip the tenders in the sauce. Serve hot and enjoy!
