Ingredients: 1 lb white fish fillets. 2 tbsp chipotle powder. 1/4 cup mayonnaise. 1 lime, juiced. 1 cup shredded lettuce. 1/2 cup diced tomatoes. 1/4 cup chopped cilantro. 8 small corn tortillas. Salt and pepper to taste. Vegetable oil for frying.
Instructions: Season the fish fillets with chipotle powder, salt, and pepper. In a small bowl, mix mayonnaise and lime juice to make a sauce. Heat vegetable oil in a pan over medium-high heat. Fry the fish fillets for 3-4 minutes per side until crispy and cooked through. Warm the corn tortillas in a dry skillet or microwave. Instructions: Add beef chunks to the crock pot. You can put chipotle peppers, cumin, oregano, paprika, cloves, cinnamon, salt, and pepper in a bowl and mix them all together. Add the mix to the crockpot with the beef. Turn the heat down to low, cover, and cook for 8 hours, or until the beef is soft and can be shred with a fork. When the beef is done, use two forks to shred it and mix it with the cooking juices. Enjoy while hot!

Ingredients: 1 lb boneless, skinless chicken breasts, diced. 2 tbsp olive oil. 1 small onion, finely chopped. 2 cloves garlic, minced. 1 red bell pepper, diced. 1 tsp chipotle chili powder. 1 tsp ground cumin. Salt and pepper to taste. 8 large lettuce leaves such as iceberg or butterhead. 1 cup cooked brown rice. 1/2 cup black beans, drained and rinsed. 1/2 cup corn kernels fresh or frozen. 1/2 cup diced tomatoes. 1/4 cup fresh cilantro, chopped. 1/4 cup Greek yogurt or sour cream. 1 lime, cut into wedges.
Instructions: Warm up 1 tablespoon of olive oil in a big pan over medium-high heat. The chicken should be cooked all the way through after you add it. It should take about 5 to 7 minutes. Take it out of the pan and set it aside. The last tablespoon of olive oil should be added to the same pan. Cut up the red bell pepper, onion, and garlic and add them. It will take about 4 to 5 minutes of sauting until the vegetables are soft. Add ground cumin, salt, and pepper to the cooked chicken that has been put back in the pan. Mix everything together, and cook for another two to three minutes, until the spices start to smell good. Put a lettuce leaf on a serving plate before you start putting the wraps together. Place some cooked brown rice on top of the lettuce leaf, then add the chicken and vegetable mix. Add corn, chunks of tomato, fresh cilantro, and black beans on top. Put sour cream or Greek yogurt on top, and then squeeze a lime wedge over the top. Like a burrito, wrap the lettuce around the filling and tie it off. Do it again with the rest of the lettuce leaves and filling. Feel free to eat the Chipotle Chicken Lettuce Wraps right away.
