Bo Kho is a hearty and flavorful Vietnamese beef stew infused with aromatic spices and herbs. This comforting dish is perfect for warming up on chilly days and pairs beautifully with steamed rice.
Ingredients: 1 kg beef chuck, cut into chunks. 2 onions, sliced. 4 cloves garlic, minced. 2 stalks lemongrass, crushed. 3 carrots, sliced. 1 can 400g crushed tomatoes. 3 tbsp tomato paste. 2 tbsp fish sauce. 1 tbsp soy sauce. 1 tbsp sugar. 1 tbsp curry powder. 1 tsp five-spice powder. 1 tsp paprika. 1/2 tsp chili flakes. Salt and pepper to taste. 4 cups beef broth. 3 potatoes, cut into chunks. Fresh cilantro, chopped, for garnish. Steamed rice, for serving.
Instructions: In a large pot, heat some oil over medium heat. Brown the beef chunks in batches, then set aside. In the same pot, add a bit more oil if needed. Saut onions, garlic, and lemongrass until fragrant. Add carrots and continue cooking for a few minutes. Return the beef to the pot. Add crushed tomatoes, tomato paste, fish sauce, soy sauce, sugar, curry powder, five-spice powder, paprika, chili flakes, salt, and pepper. Stir to combine. Pour in beef broth and bring to a simmer. Cover and cook for about 1.5 hours, or until the beef is tender. Add potatoes and continue cooking until they are cooked through, about 20-30 minutes. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro, and accompanied by steamed rice.
