Eat a tasty and healthy spinach omelette that is full of fresh vegetables and cheese that has been melted. This healthy omelette is a great way to start the day!
Ingredients: 2 large eggs. 1/4 cup fresh spinach, chopped. 1/4 cup diced tomatoes. 2 tablespoons diced red bell pepper. 2 tablespoons diced onion. 1/4 cup shredded low-fat cheese. Salt and pepper to taste. 1 teaspoon olive oil.
Instructions: In a bowl, beat the eggs until well mixed. Heat olive oil in a non-stick skillet over medium heat. Add diced onions and red bell pepper to the skillet and saut for 2-3 minutes until they soften. Add chopped spinach and diced tomatoes to the skillet and saut for an additional 2 minutes until the spinach wilts. Pour the beaten eggs over the sauted vegetables in the skillet. Cook the omelette for 2-3 minutes or until the edges start to set. Sprinkle the shredded cheese evenly over one half of the omelette. Carefully fold the other half of the omelette over the cheese-filled half. Cook for an additional 2 minutes until the cheese melts and the omelette is fully cooked. Season with salt and pepper to taste. Slide the spinach omelette onto a plate and serve hot.
