These Spinach Pancakes are a healthy and tasty take on regular pancakes. They make a healthy breakfast or brunch because they are full of fresh spinach and Parmesan cheese.
Ingredients: 1 cup fresh spinach leaves. 1 cup all-purpose flour. 1 tsp baking powder. 1/2 tsp salt. 1/4 tsp black pepper. 1 egg. 1 cup milk. 2 tbsp melted butter. 1/4 cup grated Parmesan cheese. Cooking oil for frying.
Instructions: Clean the fresh spinach leaves and cut them into small pieces. Put the flour, baking powder, salt, and black pepper in a bowl and mix them together. Mix the egg with a whisk in a different bowl. Then add the milk and melted butter and mix well. Add the wet mixture to the dry mixture and mix it in just a little. Grate the Parmesan cheese and add it to the batter. Mix it all together. Put a little cooking oil in a skillet or frying pan and heat it over medium-high heat. Spread out a circle of the spinach pancake batter on the hot pan with a ladle. Each side should be cooked for two to three minutes until it turns golden brown and is fully cooked. Do this again with the rest of the batter, adding more oil to the pan if needed. Served hot, top the spinach pancakes with what you like.
