These cupcakes are a fun treat that are based on the classic cocktail Margarita. They make your dessert table more interesting with a zesty and boozy twist and are great for parties and get-togethers.
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 2 tbsp lime zest. 1/4 cup lime juice. 1/4 cup tequila. 1/4 cup triple sec orange liqueur. 1/4 cup milk. For the Margarita Frosting:. 1/2 cup unsalted butter, softened. 4 cups powdered sugar. 1/4 cup tequila. 2 tbsp lime juice. 1 tbsp triple sec. Lime wedges and coarse salt for garnish.
Instructions: Preheat your oven to 350F 175C and line a cupcake pan with cupcake liners. In a bowl, whisk together flour, baking powder, and salt. In another bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the lime zest, lime juice, tequila, and triple sec. Gradually add the dry ingredients to the wet mixture, alternating with milk, beginning and ending with the dry mixture. Mix until just combined. Fill each cupcake liner 2/3 full with batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove cupcakes from the oven and let them cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. For the Margarita Frosting, beat the softened butter until creamy. Gradually add powdered sugar, tequila, lime juice, and triple sec, mixing until the frosting is smooth and well combined. Once the cupcakes are completely cooled, frost them using a piping bag or a knife. Garnish with lime wedges and a light sprinkle of coarse salt. Enjoy your Margarita Cupcakes!
