Easy St. Patrick's Day Cookies - Festive Fun
Enjoy these festive and delicious sandwich cookies filled with mint-flavored chocolate goodness on St. Patrick's Day. The buttery green cookies and creamy filling are a delicious combination!
Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1 teaspoon baking powder. teaspoon salt. Green food coloring. 1 cup mint-flavored chocolate chips. 1 cup heavy cream. 1 teaspoon peppermint extract. Powdered sugar, for dusting.
Instructions: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing well to combine. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Add green food coloring to achieve the desired shade of green for the cookies. Divide the dough in half, shape into discs, and wrap in plastic wrap. Chill in the refrigerator for at least 1 hour. Preheat the oven to 350F 175C and line baking sheets with parchment paper. Roll out the chilled dough on a floured surface to about -inch thickness. Use shamrock-shaped cookie cutters to cut out cookies. Place them on the prepared baking sheets. Bake for 8-10 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. For the mint filling, heat the heavy cream in a saucepan until it just begins to simmer. Remove from heat and stir in the mint-flavored chocolate chips until smooth and melted. Add peppermint extract and mix well. Let the filling cool and thicken in the refrigerator for about 1 hour. Once the filling has thickened, spread a generous amount onto the flat side of half of the cooled cookies. Top with the remaining cookies to create sandwich cookies.
