How 'Super Tasters' Have an Additional Bitterness Receptor That Others Don't Have
Ever since I was a kid I’ve loved eating food just because I like experiencing new flavors and textures and in pretty much every way it’s led me to being just about the nonpicky person of all. I’ll eat anything. The only thing I’ve eaten that I’ve flat out not enjoyed was eyes, and it’s just because they’re Looking At Me and I don’t like that.
I love cilantro. I put it on so much. I put coriander in a lot of my cooking as well. One thing I’ve never understood though is what people meant when they were like “throw some cilantro on there for some peppery notes” or “coriander will add a much needed citrusy twist” which always confused the hell out of me because what do you mean have you never had a Citrus?? Cilantro is like. Super bitter. That’s the point of it, it adds an unmistakable “oh that’s cilantro, neat” flavor
I’ve recently learned that I in fact had never tasted soap until some got in my mouth the other day, and let me tell you, was not expecting cilantro. So I guess I’m one of the people who can taste that one chemical it has, and if that’s the case I honestly don’t know if it’s worse that I went my whole life without naturally making the connection that the hundreds of recipes I’ve used calling soap citrusy probably knew what they were talking about more than an overly sure college student or that I guess I just enjoy the taste of soap sometimes.
Heyyy in the picky eater post's tags, you said you're a super taster. I know what that is, but I'm just curious...what's it like? Are there combos other people love that you hate? Vice versa? No need to answer if that's uncomfortable.
I feel like a lot of the time I'm just really sensitive to very small differences in taste that wouldn't necessarily be noticeable to most folks. Like one example that I've noticed over the years is between different brands of milk there is a LOT of flavor variation, to the point that I avoid certain brands in the store because I think they taste nasty/weird.
As for the flavor combo thing... maybe? I've definitely come up with weird flavor combinations before, but I always blamed that more on stoner tendencies 😂 (one that comes to mind is back in college there was a local pizza chain that should cinnamon sugar almond dessert bread and I lovvvvvved dipping it in ranch)
if you are living with someone who has dietary restrictions and they ask you to not eat something of theirs because it’s the only thing like that they can eat but you eat it anyway then you’re an asshole.
I'm 24 I'm pretty sure I should like Vegetables
Its frustrating. I've gone through culinary schooling and done everything I can to woden my taste horizons and truthfull as an eater I am much less picky than I used to be. I am however still pretty picky. My pallet has developed enough that I can by tasting vegetables know how they should taste when other people will think their cooked well but it's like ash in my mouth. At least at first. Flavors always hit me in waves. At first most vegetables unless they are of a particularly pungant variety start relatively tasteless but the vast majority are this intense sickly warm bitterness that has at times made me ill. When I do eat veggies it helps to have them raw, deep fried, or at least sautéed but for many it's not enough. It is likely that ny problems can be attributed to one of two issues. I have a disorder that alters how I precieve sensory information. It's an interesting little thing that has had a few noted positive and negative difference between the average but mostly I'm okay. The disorder sort of effects everyone differently. It is fair to think that could be part of where my issues with taste come from. Especially given I have a damn near super human sense of smell. Which may sound cool but it was terrible for me as a child. The simplest smells would be so overpowering and unbareable I would often have to leave the room and get a ways a way or face being sick to the point of vomiting. Aerosols were always particularly bad. To this day the smell of Doritos makes me physically ill. Oddly enough I realized ine day why smell had likely begun to bug me less while reading an issue of Wolverine. I smoke I mean I am John Constantine I know it's a dangerous habit but I do. Interestingly enough when I smoke I get by much easier in a world full of smells as it deadens the sense. I have however quit in the past and had my super snout come back in full force all most immediatley each time. So smell could also be a factor. I was also recently tested and fou d out I was a super taster. If you don't kniw what that is look it up it's really interesting. Not that anyone is still reading cause I'm rambling. This could literally just be the reason. Some super tasters can literally only eat like one food. ONE if this is the case I'm lucky. Why did I write this? I'm always having to consider what goes into my body because of a weak stomach and my general health and I do my best to try and eat healthy but it's hard in a world where green can be my favorite color and green foods and other vegetables look so good but turn to bitter ash in my mouth. I just want something delicious and green.
I hate when people say 'You don't know what you're missing!" When referring to the fact I'm a super taster Trust me I fully understand what I'm missing
