Rendering beef tallow.
The process is the same for any animal fat. There's a couple different methods, I dry render which means I do not add anything to my fat while it renders. It can be done in a crockpot or on the stovetop. I chose crockpot since my time was very limited and I couldn't dedicate a couple hours per batch to monitoring the tallow.
I ended up with slightly less than I was going for since I wasn't quite as proficient at trimming as I thought I'd be.
Raw ground fat. You want to remove all the meaty bits and gristle. You can cube or grind, I had a higher yeild with ground and it took less time to cut the fat into chunks or strips that would fit into my grinder than it did to cube it all. (I did both in different batches)
The fat beginning to render. Use the low setting, don't boil it or it could burn and add off flavors or scents to the tallow. A couple times during the first 30 minutes I would churn the fat around so none would stick and burn until liquid had begun to build up.
Finished rendering, about 8 hours later. I scoop the cracklings out with a slotted spoon. If you do cubes you end up with a delicious crispy snack.
Straining the liquid tallow. It is a golden color when hot. If you don't filter it through a cheesecloth you will end up with little bits at the bottom. I don't usually filter my bear lard since I don't mind the little bits of extra flavor but for the tallow I wanted that all out since most will be used for stuff other than frying.
The strained liquid tallow. I put mine in the garage to cool. For bear lard, I pour it straight into mason jars.
Finished beef tallow. It can be stored in the freezer like this or further processed into other products. Depending on how clean your first render is, you might need to flip the cake over and scrape any impurities off the bottom, remelt, and strain again. You want pure white, hard, clean tallow for baking, soap, candles, or cosmetics. I don't care as much if it's for frying.
