Indulge in the rich and creamy flavors of this classic Chicken Tikka Masala. Tender marinated chicken cooked in a luscious tomato-based sauce infused with aromatic spices, finished with a touch of cream for a luxurious texture.
Ingredients: 500g chicken breast, diced. 1 cup Greek yogurt. 2 tbsp lemon juice. 2 tbsp olive oil. 1 onion, finely chopped. 4 cloves garlic, minced. 1 inch ginger, grated. 1 can 400g crushed tomatoes. 1 cup heavy cream. 2 tbsp tomato paste. 2 tsp garam masala. 1 tsp ground cumin. 1 tsp ground coriander. 1 tsp paprika. 1/2 tsp turmeric. 1/2 tsp chili powder. Salt and pepper to taste. Fresh cilantro, for garnish.
Instructions: Put Greek yogurt, lemon juice, and a pinch of salt in a bowl. Add diced chicken and mix that in. Let it sit for at least 30 minutes, but ideally overnight. Warm up a big pan with olive oil over medium-low heat. It will take about 5 minutes of cooking after adding the chopped onion until it is soft. After you add the ginger and garlic, cook for two more minutes until the food smells good. Pour in the tomato paste, heavy cream, ground cumin, ground coriander, paprika, turmeric, chili powder, salt, and pepper. Mix everything together well. Simmer for 10 to 15 minutes, stirring every now and then. Grill or pan-fry the chicken that has been marinated for about 8 to 10 minutes, or until it is cooked all the way through and has a little char. Stir the cooked chicken into the sauce, then let it cook for another 5 minutes so that the flavors can blend. Add fresh cilantro as a garnish before serving. Have it with naan or rice!
