Ingredients: 1 cup chopped pecans. 1/2 cup unsalted butter. 1/2 cup brown sugar. 1/2 cup granulated sugar. 1 tablespoon all-purpose flour. 1/4 teaspoon salt. 1 egg. 1 teaspoon vanilla extract. 1 cup rolled oats. 4 ounces semi-sweet chocolate, chopped.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a small bowl, mix the chopped pecans and rolled oats together. Set aside. In a saucepan over medium heat, melt the unsalted butter. Stir in the brown sugar, granulated sugar, flour, and salt. Cook, stirring constantly, until the mixture is smooth and starts to bubble. Remove the saucepan from heat, and then add the egg and vanilla extract. Stir until well combined. Gradually mix in the pecan and oat mixture until evenly distributed. Drop spoonfuls of the cookie batter onto the prepared baking sheet, leaving enough space for them to spread during baking. Flatten each cookie slightly with the back of a spoon. Bake in the preheated oven for 10-12 minutes, or until the cookies are golden brown and lacy around the edges.
