Vegan tortillas
I found the recipe of this flatbreadon the blog: Cucina Felice Vegan, I slightly modified it and I should admit I liked it very much. This is why I propose it here today!
It’s easy and quick to prepare, plusit can greatly replace all those ready flatbread available at the supermarket thatare usually sold as tortillas, chapattis, piadina or any other kind of readyflatbread.
I had it for lunch and I've stuffed mine with eggplant, mushrooms and chickpeas all in oil -regularly homemade (the eggplant and the mushrooms have been donated to me from my friend Midori ☺)-, combined with a few tablespoons of tahini. But of course anyone can fill it as he/she prefers!
Ingredients
(4 tortillas)
250 grams of semolina flour
1 tablespoon extra virgin olive oil
1 teaspoon baking soda
1 teaspoon salt
120 ml of warm water
1 tablespoon ground pumpkin seeds
1 teaspoon cumin
Preparation
In a bowl combine the sifted flour, the baking soda, the salt, the grounded seeds, the cumin and the olive oil.
Add the warm water and start to mix first with a fork, then knead for a few minutes until mixture is smooth and elastic. Divide the dough into four equal parts and make balls.
Let stand the balls for minimum thirty minutes, then lay them out with a rolling pin on a floured flat surface. You need to obtain a few millimetres thin flat bread.
Cook each tortilla for about three minutes per side, or at least until golden brown.

Tortillas (o piadina) vegan
Ho trovato la ricetta per preparare la piadina vegan sul blog: Cucina Felice Vegan, la ho leggermente modificata però devo dire che mi è piaciuta davvero molto. Per questo la propongo qui.
E’ facile e veloce da preparare e può largamente sostituire tutti quei preparati da supermercato che sono venduti come piadine, chapati, tortillas o altro.
Io ho l’ho farcita con melanzane, funghi e ceci tutti sott’olio regolarmente fatti in casa (le melanzane e i funghi me li ha donate la mia amica Midori J ), uniti a qualche cucchiaio di tahin, ognuno potrà però farcirle come più preferisce!
Ingredienti
(4 tortillas)
250 gr di farina di semola
1 cucchiaio di olio EVO
1 cucchiaino di bicarbonato di sodio
1 cucchiaino di sale
120 ml di acqua tiepida
1 cucchiaio di semi di zucca tritati
1 cucchiaino di cumino
Preparazione
Unire in una ciotola la farina setacciandola, il bicarbonato, il sale, i semi, il cumino e l’olio.
Aggiungere l’acqua tiepida e cominciare a mescolare prima con una forchetta, poi impastare per qualche minuto sino a ottenere un composto omogeneo ed elastico. Dividere l’impasto in quattro parti uguali e farne delle palline.
Lasciare riposare le palline per minimi trenta minuti, poi stenderle con una matterello su un piano infarinato ottenendo delle tortillas sottili, e cuocere ogni piadina per circa tre minuti per lato, o almeno sino a doratura.
Coprire con un panno le piadine pronte mentre le altre si cuociono, farcirle poi a piacimento e servire.
