Take your mashed potatoes to the next level with this loaded mashed potato casserole. Creamy mashed potatoes are mixed with sour cream, butter, cheese, bacon, and green onions, then baked until golden and bubbly.
Ingredients: 6 large potatoes, peeled and cubed. 1/2 cup sour cream. 1/4 cup butter. 1/4 cup milk. 1 cup shredded cheddar cheese. 1/2 cup cooked and crumbled bacon. 2 green onions, chopped. Salt and pepper to taste.
Instructions: Warm the oven up to 175F 350C. In salted water, boil potatoes for about 15 to 20 minutes, or until they are soft. Put the potatoes back in the pot after draining them. Mash the potatoes with sour cream, butter, and milk until they are smooth. Add green onions, 3/4 cup of cheddar cheese, and half of the bacon. Add pepper and salt. Put the mashed potatoes in a baking dish that has been greased. Add the rest of the bacon and cheddar cheese on top. Bake for 20 to 25 minutes, or until hot all the way through and the cheese melts and bubbles. If you want, add more green onions as a garnish before serving.
