Vegan sloppy joes with a hearty and tasty twist. Packed with protein-rich lentils and a rich, tangy sauce. It's perfect for a filling and cozy meal!
Ingredients: 1 cup lentils, rinsed. 3 cups vegetable broth. 1 tablespoon olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1 cup mushrooms, diced. 1 can 15 oz tomato sauce. 2 tablespoons tomato paste. 2 tablespoons maple syrup. 1 tablespoon soy sauce. 1 tablespoon apple cider vinegar. 1 teaspoon chili powder. 1/2 teaspoon paprika. 1/2 teaspoon cumin. Salt and pepper to taste. 6 whole grain burger buns.
Instructions: Put lentils and vegetable broth in a saucepan and mix them together. Bring to a boil, then lower the heat and let it cook for 20 to 25 minutes, until the lentils are soft and most of the liquid is gone. Warm up the olive oil in a big pan over medium-low heat. Put in the mushrooms, bell pepper, onion, and garlic. For about 5 to 7 minutes, or until soft, cook. Then add the maple syrup, soy sauce, apple cider vinegar, chili powder, paprika, cumin, salt, and pepper. Also add the cooked lentils. Mix things together well. Keep the mixture on low heat for another 10 to 15 minutes, until it gets thicker and hot all the way through. If you want, you can toast the burger buns first, and then put the sloppy joe mixture on the bottom halves of the buns. Add the other halves of the buns on top. Enjoy while hot!
