Składniki:

2 średnie bakłażany (lub 3 duże) 2 średnie cukinie 3 duże czerwone papryki ok. 10 suszonych pomidorów (z oleju) sól i czarny pieprz do smaku

Sos pomidorowy klasyczny 4 dojrzałe pomidory malinowe 1/2 cebuli 3 ząbki czosnku duża łyżka przecieru pomidorowego łyżka suszonego oregano listki bazylii z 2 gałązek sól i czarny pieprz do smaku

Wykonanie:

Cukinie, bakłażany i papryki umyć, wytrzeć i odciąć końcówki. Papryki rozciąć wzdłuż na ćwiartki i usunąć gniazda nasienne z pestkami. Przygotować duży, ostry nóż. Bakłażany i cukinie pociąć wzdłuż na cienkie plastry (maks. 4 mm). Uważać na paluszki!

Rozgrzać mocno dużą patelnię i opędzlować oliwą z oliwek e.v. Tłuszcz powinien jedynie omieść naczynie. Smażyć warzywa z obu stron (po 3 plastry) do zrumienienia. Odkładać na duży talerz.

Papryki smażyć z obu stron, dociskając łopatką do patelni. Powinny zmięknąć i złapać brązowe przysmażenia. Równie dobrze możemy je upiec w piekarniku (200°C, 30-40 minut).

Rozgrzać piekarnik do 185°C.

Przygotować sos. Cebulę i czosnek obrać. Cebulę pokroić w drobną kosteczkę, czosnek zmiażdżyć płaską częścią noża i rozdrobnić maksymalnie. W nieduzym rondlu rozgrzać oliwę z oliwek i zeszklić cebulę z czosnkiem. Pomidory pokroić w kostkę (wyciąwszy twarde końcówki) i wrzucić do rondla. Dodać przecier, oregano i pierwsze 5 minut gotować na średnim ogniu. Potem zmniejszyć płomień i pozwolić, aby sos delikatnie mrugał przez kolejne 15 minut. Dosmakować solą i pieprzem. Wrzucić porwaną bazylię i wymieszać.

Na pasku bakłażana (jeśli jest duży, rozciąć wzdłuż na pół) ułożyć pasek cukinii i dwa kawałki papryki, jeden za drugim, i odsączony suszony pomidor. Zwijać ściśle roladkę. I tak do wyczerpania się składników.

Żaroodporne naczynie do zapiekanek wysmarować oliwą, wlać sos i włożyć na sztorc roladki. Oprószyć je solą i pieprzem. Na każdej ułożyć gruby plaster mozzarelli.

Wstawić do piekarnika na ok. 30-40 minut.

Podawać z ciabattą lub innym białym pieczywem, którym cudownie wybiera się sos z talerza.
