In the aromatic Indian dish mattar tofu, tofu and green peas are simmered in a hot gravy made with tomatoes. It's a filling vegetarian dish with lots of color and protein.
Ingredients: 300g tofu, cubed. 1 cup frozen green peas. 1 onion, finely chopped. 2 tomatoes, chopped. 2 cloves garlic, minced. 1-inch ginger, grated. 1 green chili, chopped. 1 teaspoon cumin seeds. 1 teaspoon coriander powder. 1/2 teaspoon turmeric powder. 1/2 teaspoon garam masala. 1/2 teaspoon red chili powder. 2 tablespoons oil. Salt to taste. Fresh coriander leaves for garnish.
Instructions: Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped onions, garlic, ginger, and green chili. Saut until onions turn golden brown. Add chopped tomatoes and cook until they soften. Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for 2 minutes. Add cubed tofu and green peas. Mix gently to coat tofu and peas with spices. Cover and cook for 5-7 minutes, stirring occasionally. Sprinkle garam masala and mix well. Garnish with fresh coriander leaves. Serve hot with rice or roti.
