These veggie skewers cooked on a grill are a colorful and tasty side dish that goes well with any barbecue. The marinade makes the vegetables taste even better after being grilled.
Ingredients: 2 bell peppers, cut into chunks. 1 zucchini, sliced. 1 red onion, quartered. 1 cup cherry tomatoes. 1/4 cup olive oil. 2 tablespoons balsamic vinegar. 2 cloves garlic, minced. 1 teaspoon dried oregano. Salt and pepper to taste.
Instructions: Warm up the grill over medium-high heat. Add garlic, oregano, salt, and pepper to a bowl and mix them together using a whisk. Switch between the bell peppers, zucchini, red onion, and cherry tomatoes as you put the vegetables on the skewers. Use the marinade to brush on the vegetable skewers. Put the skewers on a grill that has already been heated up. Cook for 10 to 12 minutes, turning them over every so often, until the vegetables are soft and slightly charred. Take it off the grill and serve it hot.
