This Chicken Poblano Queso Blanco is a creamy and flavorful dip that combines tender chicken, roasted poblano peppers, and melted white cheese. It's perfect for parties, game days, or any occasion when you want to impress your guests with a delicious appetizer.
Ingredients: 2 boneless, skinless chicken breasts, diced. 2 poblano peppers, roasted, peeled, seeded, and diced. 1 small onion, diced. 2 cloves garlic, minced. 1 tablespoon olive oil. 1 cup white melting cheese such as Monterey Jack or white cheddar, shredded. 1/2 cup milk. Salt and pepper to taste. Tortilla chips, for serving.
Instructions: Put olive oil in a pan and heat it over medium-low heat. It will take about 5 to 7 minutes of cooking after adding the diced chicken until the chicken is no longer pink. Slice the poblano peppers, onion, and garlic and add them. It will take about 5 minutes of cooking until the vegetables are soft. Turn down the heat. Add milk and shredded cheese, and mix until the cheese melts and the mixture is smooth. Add pepper and salt to taste. Warm it up and serve it with tortilla chips to dip.
