KALE YEAH!!! On Thursday when I got lots of kale from my @wildrabbitfarms CSA box, I knew I had to make one of my fave brunch dishes... scrambled eggs with kale, goat cheese & herbs! 🥚🍳🥬🐐🧀🌱 It’s a protein packed dish that will prepare me for the podcast interviewing ahead of me today!! 🥬❤️🥬❤️🥬 Micro Farmer Friend, Josh brought some glorious Tuscan kale which is the most glorious & beautiful dark green which inspired me to make this hearty and easy egg scramble that can be customized to whatever you’ve got on hand! I sautéed the chopped kale (minus ribs) in some butter with a pinch of salt. I fried it on medium heat until it was mostly wilted and some of the kale started to crisp up like a kale chip. Then I added the scrambled eggs and goat cheese and turned the fire down to low. Then I added my herbs (chive and dill from my garden). Slowly stirred the eggs until they were to my preferred creamy doneness! I finished it off with some of my Bay Salt! 👩🏼🍳🥬🥚👌🏻👏🏻🤤 Voila! A delish brunchy dish I’m enjoying on my patio while Sofie & Ringo chase butterflies and bees! 🐱🐈🦋🐝 Gotta love some local eats!
