I've been playing through Wind waker recently and realized wind startles like a cat when the door closes bc he does the exact same thing in game.
So I got curious and looked up the others to see how accurate the reaction are, here is what I found:
In Phantom hourglass link has pretty much the same reaction as wind waker. The surprised full turn to look at the door. So, pretty accurate.
I'm not gonna get into Spirit tracks because it's already been discussed that he hasn't discovered the land for new Hyrule yet. (Yes I know it's a different link but I heard they were the same in LU)
Four:
In Minish cap, link will turn to look at the door, no visible expression but he does turn towards the door .
In Four swords Adventures we get no reaction (his previous reaction and this one were probably mixed into what we ended up getting in the comic, just a glance back.)
In Fs I couldn't find any instances of the door shutting behind you, generally it teleports you into the boss fight, but we can asume it's the same as Fsa (correct me if I'm wrong)
Time:
In Oot when you play as young link he startles and looks back, generally very expensive. (Navi startles too)
When playing as Adult Link he shows no reaction while going against dungeon bosses, he does turn around facing mini bosses, this isn't how he's portrayed in LU.
In Majora's Mask we see young link again (he's adult link transported to the past), he has no reaction to the dungeon bosses but is startled by unexpected mini bosses.
Like I said he startles when it's unexpected and has no reaction to clear dungeon bosses (Great game design). His reaction in LU is probably due to him being older and more experienced, or maybe he was expecting one of these doors to slam down because they've progressed quite a bit through the dungeon.
Anyways the conclusion is that Jojo is great at referencing the game and adds little nods everywhere. And that I looked too much into it.
