Ingredients: 1 cup 2 sticks unsalted butter. 1 cup granulated sugar. 2/3 cup brown sugar. 2 large eggs. 1 teaspoon vanilla extract. 3 1/4 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 cup semisweet chocolate chips. 1 cup mini marshmallows. 1/2 cup powdered sugar for dusting. 1/4 cup hot cocoa mix.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until it's light and fluffy. Add the eggs and vanilla extract to the butter-sugar mixture and mix until well combined. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft cookie dough forms. Fold in the semisweet chocolate chips and mini marshmallows. Using a cookie scoop or a spoon, drop rounded tablespoons of dough onto the prepared baking sheet. Bake in the preheated oven for 10-12 minutes, or until the cookies are set but still slightly soft in the center. While the cookies are baking, combine the powdered sugar and hot cocoa mix in a shallow bowl. Remove the cookies from the oven and let them cool for a couple of minutes on the baking sheet.
