A simple and tasty gluten-free crockpot recipe for Hawaiian sweet and sour beef. Beef that is just the right amount of tenderness and a sweet and sour sauce that is full of pineapple and bell peppers.
Ingredients: 2 lbs beef stew meat. 1 cup pineapple chunks. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 onion, sliced. 3 cloves garlic, minced. 1/2 cup gluten-free soy sauce. 1/4 cup apple cider vinegar. 1/4 cup honey. 1 tablespoon tomato paste. 1 tablespoon tapioca starch or arrowroot powder. Salt and pepper to taste. Sesame seeds for garnish optional. Green onions for garnish optional.
Instructions: Put meat from beef stew, pineapple chunks, bell pepper slices, onion, and garlic mince into the crockpot. Sugar, tomato paste, tapioca starch or arrowroot powder, salt, and pepper should all be mixed together in a small bowl with a whisk. Add the sauce to the crockpot with the beef and vegetables. Use a stir to mix. Put the lid on and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the beef is soft. Once it's done, check the seasoning and make any necessary changes. Serve hot on top of cauliflower rice or cooked rice. If you want, you can add sesame seeds and sliced green onions as a garnish.
