What’s Growing: Winter vegetables

Despite the very cold weather, my veggie garden is still producing some lovely root vegetables, it is just a bit chilly picking them! We have really enjoyed adding some beetroot to our roast vegetable mix, adding a delicious flavour, colour and sweetness to the usual selection of carrot, potato, pumpkin and onion.

A late planting of lettuce varieties including the popular iceberg lettuce has continue to produce a crop even with the very low temperatures we have had recently. It is very convenient to pop down to the veggie patch and grab a fresh lettuce in the middle of winter, even if I needed a torch and an umbrella the other evening when I picked this one to add to my home-made hamburgers!
