A pressure cooker recipe for quick and tasty Chicken Cacciatore. Tender chicken cooked in a tomato, wine, and herb sauce that smells great.
Ingredients: 2 lbs chicken thighs, bone-in, skin-on. 1 onion, thinly sliced. 1 bell pepper, sliced. 2 cloves garlic, minced. 1 can 14 oz crushed tomatoes. 1/2 cup chicken broth. 1/4 cup dry red wine. 1 tsp dried oregano. 1 tsp dried basil. 1/2 tsp dried thyme. 1/2 tsp red pepper flakes optional. Salt and black pepper to taste. 2 tbsp olive oil. 2 tbsp tomato paste. 1/4 cup fresh parsley, chopped for garnish.
Instructions: Season chicken thighs with salt and black pepper. Set the pressure cooker to 'Saute' mode, add olive oil, and brown chicken on both sides. Remove and set aside. In the same pot, saut onions, bell peppers, and garlic until softened. Stir in tomato paste, oregano, basil, thyme, and red pepper flakes if using. Pour in crushed tomatoes, chicken broth, and red wine. Mix well. Add the browned chicken back into the pot. Close the pressure cooker lid, set to 'Poultry' mode, and cook for 15 minutes. Once done, allow natural pressure release for 5 minutes, then quick release any remaining pressure. Check seasoning and adjust if needed. Garnish with fresh parsley before serving.
