When one's net carb count is severelely medically restricted, having a sandwich becomes a dream of a bygone age. @thinslimfoods made a bread that does not have the texture of roofing material, tastes as good as any other low cal bread and only vaguely smells like "health food" Zero net carbs for the bread. Virtually No Carb Bread!
My name is Briana and I L-O-V-E a hearty grain bread - Yes, I am ashamed to admit I was a former addict one might say. Warm crusty bread dipped in garlic olive oil with red pepper flakes, who needed the rest of your meal when that slice of heaven was there for the taking? But with all my nutrition knowledge, desire to live a long time to be around for my beautiful daughter and my "lead by example" attitude, I had to find another way to get my fill without going against by health. Tada! This little baby was born from a drop of desperation, a dollop of love and a smidge of haphazardness in the kitchen. My suggestion is to let this loaf cool first then cut off a slice and broil or toast it until it gets that nice little crisp to its edges. I have enjoyed it with coconut butter, grass-fed butter, olive oil concoctions and most recently as a breakfast sandwich with sauteed kale, eggs and organic muenster cheese. The Recipe:
1) Beat together wet ingredients: 4 eggs & 3 tablespoons of water
2) Mix dry ingredients in a separate bowl: 1 cup ground flaxseed 1 teaspoon baking powder 1/2 cup ground almonds (i used pecans on this one) 1/2 teaspoon salt
3) Add wet ingredients to the dry ingredients, mix well. Put in a loaf tin, cook for 20 minutes at 400 degrees F. I also made another loaf and loaded it with fresh garlic slices and minced garlic! Yum!
