Hey, kittens! I hit a bit of a road block on my weight loss. I wanted to chat about what’s been going on with my mental health and what I’ve been trying to do to heal myself. I have spent a lot of time doing yoga and with my growing family of cats. haha But really, we all have our own struggles, and I think it’s important to embrace where we are at, even if it’s not where we want to be or not attaining the weight loss that we would like to be making. Your health is more than your weight.

Crustless Broccoli Quiche
This recipe is about 2-3 spoons depending on your specific challenges!
It's mostly eggs, so for folks with texture sensitivity do watch out for that.
Ingredients: 8 eggs, 3/4 sour cream, 10oz bag of frozen broccoli, 1 cup of shredded cheese (any type you like, I prefer sharp cheddar), spices: 1 tbsp garlic powder, 1/4 tsp salt, 1/2 tsp pepper, 2 tbsp italian seasoning.
Preheat oven to 375 F.
Get out a big bowl and add the eggs. Whisk the eggs, then add all the other ingredients. Mix well (you can use the whisk). You can chop up the frozen broccoli at the expense of 1 spoon.
Butter/grease/spray a 9 inch pie tin. Pour the contents of the bowl into the pie tin. (You can use an 8x8 or 9x9 pan too, you'll just have to be a little more watchful as it bakes).
Bake for 30-40 minutes! The top should be a little brown and shouldn't wiggle any more.
This recipe is super forgiving. Don't like broccoli? You can add spinach instead (add a good 15 mins onto cooking time though because spinach is watery and acts weird). You can add mushrooms or peppers or honestly anything, but I think broccoli/spinach/mushrooms taste the best.
Don't have the right dairy ingredients? You can use cottage cheese, PLAIN yogurt, heavy cream, or cream cheese instead. I'd melt the cream cheese a little so it blends/whisks nicely.
Add more or less spices to taste. Good luck!

A moment of truth -
I feel like I’m literally going through withdrawal. I’ve been eating horribly lately and gained back over 15 pounds. I’ve been focusing on my mental health but ignored how bad eating habits make me feel shitty. So I’m trying to get back into healthy diabetic habits. However, I’ve been having constant really bad headaches. Apparently sugar withdrawal is a real thing. It can last up to two weeks. This isn’t fun. I’ll remember this next time I start losing control of my diet.
It is so hard to keep a balance of care for yourself! I gave up sugar for 12 days but then decided that I wanted lasagna. And today, the day after I have had a decent amount of junk food. It is just difficult for me to have moderation and not want to eat everything once I start down the rabbit hole. I feel for you and take care of yourself!
Day 75 of Quarantine. 35 lbs down. 75 days without alcohol. Still a ways to go but I hope you’re inspired!
