Ingredients: 1 lb flank steak, thinly sliced. 2 tablespoons coconut aminos. 2 tablespoons lime juice. 1 tablespoon fish sauce. 1 tablespoon sesame oil. 1 teaspoon grated ginger. 2 cloves garlic, minced. 4 cups mixed greens. 1 cucumber, thinly sliced. 1 bell pepper, thinly sliced. 1/4 cup chopped fresh cilantro. 1/4 cup chopped fresh mint. 1/4 cup chopped peanuts or almonds optional, for garnish.
Instructions: In a bowl, whisk together the coconut aminos, lime juice, fish sauce, sesame oil, ginger, and garlic to make the dressing. Place the sliced flank steak in a shallow dish and pour half of the dressing over it. Toss to coat the steak evenly. Let it marinate for at least 30 minutes. Heat a grill or grill pan over medium-high heat. Grill the marinated steak for 2-3 minutes per side, or until cooked to your desired level of doneness. Remove from the grill and let it rest for a few minutes before slicing thinly against the grain. In a large bowl, combine the mixed greens, cucumber, bell pepper, cilantro, and mint. Add the sliced steak to the salad and drizzle with the remaining dressing. Toss everything together until well combined. Garnish the salad with chopped peanuts or almonds if desired. Serve the Thai beef salad immediately and enjoy!
