Tonight's dinner! This is a vegan version of a cream of broccoli and cheese soup that is completely oil and fat free! Crispy Brussels and Coconut Bacon 🥓 all vegan all delicious! Never thought I would enjoy brussel sprouts - funny story is that when I was a child I was soooo picky (I'm a super taster ) and would only eat raw carrots and raw celery with pb 😂 literally not a single other vegetable and actually threw up trying to eat peas once no joke! Now that I'm vegan I have forced myself to eat every veggie I can find and omg I am in love with vegetables now I can't go a meal without a vegetable or two or three in it . My parents are like who are you?! What happened to plain macaroni with salt and pepper or pb and j on bread catherine?! Haha 😂 trust me if you don't think you like veggies just learn how to cook! You won't regret it and your health certainly won't either! Pb and J cookies! Super healthy oil and sugar free ! Vegan and gluten free of course 😍❤Simply blitz 2 cups oats in a food processor (not too much don't want a flour still want oaty chuncks) , mix in 3 tbsp chia seeds, 1 tsp vanilla, 1 tsp cinnamon, 11/2 mashed ripe banana, 1/2 tsp salt - form into 8- 10 balls and press down in centre. Fill imprint with homemade berry chia jam (dm for recipe) or store bought jam of choice! Bake for 10-12 mins . Mix some nutbutter with a bit of hot water to thin and pipe on top! Done. Last nights dinner was homemade tofu scramble! Served this with sweet potato fries 🍟 I baked in the oven 😍 the tofu scramble has spinach, fresh garlic, green onion, red pepper, nutritional yeast (duh 💁🏼) , turmeric, child powder, salt and peppa ! Simply heated some avocado oil in my skillet , saluted the garlic and green onions for a few mins, crumbled in half a block of firm tofu, added the spices, saluted a bit more added the spinach , red pepper , nutritional yeast and a splash of veggie broth to keep everything from drying out and kept frying on low heat for about 4 mins - delicious and easy meal!! 🌱❤😍😘💪🏼. #vegan #whatveganseat #plantbased #plantbasedgains #nourishnotpunish #strongwomen #veganfoodshare #delicious #easyveganrecipes #nsvegans #tofu #tofuscramble #wholefood #wfpb
