Ingredients: 1 lb boneless, skinless chicken breasts, diced. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz corn kernels, drained. 1 can 14.5 oz diced tomatoes, undrained. 1 medium onion, chopped. 2 cloves garlic, minced. 1 jalapeo, seeded and diced. 1 teaspoon ground cumin. 1 teaspoon chili powder. 1/2 teaspoon dried oregano. 4 cups chicken broth. Salt and pepper to taste. Tortilla strips, shredded cheese, avocado, and cilantro for topping.
Instructions: In a Crock Pot, combine diced chicken, black beans, corn, diced tomatoes, chopped onion, minced garlic, and diced jalapeo. Add ground cumin, chili powder, dried oregano, salt, and pepper. Stir to combine. Pour in chicken broth and mix well. Cover and cook on low heat for 6-8 hours or high heat for 3-4 hours, until chicken is cooked through and flavors meld. Before serving, adjust seasoning if needed.
