Fruited Lemonade That Makes You Reconsider It All

ingredience:

lemons/limes (this needs to make up the bulk of the fruit being used, like at least 80%)

whatever other fruits or fruit scraps you want, plus any herbs/other flavorings you want to try. by fruit scraps I mean things like cherry pits, apple peels, pineapple cores, strawberry ends, things like that.

granulated white sugar, the coarser the better, 50% by weight of total citrus rinds + 100% by weight of any additional fruit. you'll measure this after you prep the fruit.

water as needed

equipment:

a few nonmetallic mixing bowls

a mesh strainer

a chinoise, ricer or some cheesecloth

a kitchen scale

a citrus juicer or reamer (manual or electric)

a potato masher

juice the citrus through a strainer - saving all rinds -  and refrigerate the juice for the time being. dice the rinds and other fruits if any, keeping the rinds separate. make note of weights, and measure your sugar.

 Place sugar in a large nonmetallic bowl. If using non-citrus fruits and/or any other flavorings, mix them in with the sugar and mash with potato masher. add diced citrus rinds, mix thoroughly, and mash again. cover and let stand at room temperature for at least 4 hours. this allows the sugar to draw out flavors that would otherwise get discarded with the rinds, and the rinds' acids should be enough to dissolve the sugar into a syrup.

Afterward, mash one last time, then collect the syrup by pressing the macerated mixture through a strainer/chinoise or ricer, or squeeze it through cheesecloth. if you want, this can be saved as a standalone syrup at this point, for use in cocktails or desserts. if not, slowly pour the reserved juice through the solids to to help get the remaining syrup out, and squeeze/press again. do the same thing one more time with warm water (roughly the same amount of water as juice). discard solids (or try making sangria with them!).

taste the mixture and add more water if necessary. a stronger mix is totally fine if you anticipate serving over ice on a hot day, or adding booze, or if there was a lot of non-sour fruit. keep in mind that it will taste a bit less sweet once it's chilled. pour into a pitcher and refrigerate.

citrus oils will float to the top, so stir/shake before serving. love you. enjoy.

based on the research i've done (and lived experience) of nautical linguistics- the syllables are the most important part of the word! for every command- historically and on modern tall ships, the command must be repeated by the crew exactly is it was heard: no conjugation, no changing of word order, nothing (referred to as a "call-back"). so it makes sense that these words are shortened in this manner.

boats are big, the ocean is loud, and there's a lot of stuff that gets in the way of words traveling coherently across the deck. it's also so rare to get a command when you aren't already entrenched in something else, and so may not be able to turn your head before acknowledging that you've heard. i've linked an NPR article from 2015 about how words travel in different environments, but basically the big takeaway for this scenario is: consonants get lost easily in windy or obstructed environments. there's been many a time (even in fair weather) where i'm having a conversation, on the opposite side of the boat, or even down below when an order is given, where i just hear the cadence of a command i'm familiar with and know immediately what i'm supposed to be doing.

on particularly well-practiced crews, i notice that even the tonal pattern of the officer giving the command is repeated. even without the tonal match, it's critical for the officer to have immediate feedback AND immediate response. when you get an order, you lay into it with urgency; therefore, if you repeat just as you head to your station, redirection can be given swiftly if an incorrect order has been transmitted, BUT if you heard it right the first time there's no delay in the task.

here is the full open access article from the researchers! one big takeaway for me is that almost every mummy we've found from the Pazyryk culture has had these intricate tattoos (although these are a particularly beautiful example.) the older the person, the more tattoos they tend to have. so this was a widespread cultural practice, not just one rad grandma! highly recommend giving the article a read - there's a ton of really neat details about how the researchers (including a modern tattoo artist) analyzed the art styles and techniques (relatively similar to modern stick and poke, but with a multi-pointed implement for all but the smallest details)

The absence of overlapping images or compositions in the corpus of preserved examples suggests that the construction of tattooed bodies in Pazyryk culture was approached in a structured and deliberate manner throughout an individual’s lifetime. This implies both planning and intentionality in tattoo placement and design. The confirmed use of multiple tools and stylistic variations on a single body also reveals that tattooing in Pazyryk culture was associated with a high degree of craft specialisation and was probably performed by multiple individuals.
