These Christmas Sugar Cookie Bars are a delightful holiday treat to share. Layers of soft, buttery sugar cookie dough are topped with a sweet royal icing and colorful sprinkles. These bars are perfect for Christmas parties, gatherings, or as a special homemade gift because they are simple to make and even simpler to enjoy.
Ingredients: 1 cup 2 sticks unsalted butter, softened. 1 cup granulated sugar. 1 large egg. 2 teaspoons pure vanilla extract. 1/2 teaspoon almond extract. 3 cups all-purpose flour. 1/2 teaspoon baking powder. 1/2 teaspoon salt. Green and red food coloring. 1 batch of royal icing. Assorted Christmas sprinkles.
Instructions: Preheat your oven to 350F 175C. Grease and line a 9x13-inch baking pan with parchment paper. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the egg, vanilla extract, and almond extract to the bowl. Mix until well combined. Gradually add the flour, baking powder, and salt to the wet ingredients. Mix until a soft dough forms. Divide the dough into two equal portions. Leave one portion plain, and add green food coloring to the other portion. Mix each until the color is evenly distributed. Press the plain dough into the bottom of the prepared baking pan. Use your hands or the back of a spoon to ensure it's evenly spread. Next, add the green dough on top of the plain dough in the pan. Press and spread it out evenly, forming the second layer. Bake in the preheated oven for 20-25 minutes or until the edges are lightly golden. Remove from the oven and let it cool completely in the pan. Once cooled, prepare the royal icing and spread it evenly over the cookie bars. Decorate with Christmas sprinkles while the icing is still wet. Allow the icing to set before cutting the cookie bars into squares. Serve and enjoy the festive Christmas Sugar Cookie Bars!
