Meet the healthy twist on the classic holiday cocktail: Almond Eggnog Recipe Whip up this dairy-free “blender nog” this Christmas season- there’s no whisking, beating or cooking, and its healthy and scrumptious! Ingredients: * 4 cups unsweetened almond milk (homemade tastes the best!)*recipe below* * 6 whole free-run eggs (organic, hormone free) * 1/3 cup maple syrup * 1 tbsp vanilla extract * 1 tsp ground nutmeg * 1/2 tsp cinnamon * pinch ground clove * pinch allspice * Brandy, dark rum, bourbon or cognac, to desired strength * (1 ½ cups booze is about 1-2 oz per 1 cup serving of nog) Method: * Add almond milk and eggs to blender, blend on high for 1-2 minutes, until frothy. * Add maple syrup and spices, blend until well combined, 1-2 minutes. * Some blenders have ‘soup’ options, or will heat up on high speed- let it warm up for a minute or two on high to cook eggs slightly, if desired. * Pour into pitcher and chill in fridge overnight (12-24 hours). * If desired, stir in brandy, cognac, dark rum or bourbon, or add before serving. Almond milk recipe: Ingredients: * 1 cup raw almonds * 3-4 cups water (depending on desired creaminess) Method: * Soak almonds for 4-8 hours (optional). * Blend in high speed blender for 2 minutes, until frothy and smooth. * Strain through nut milk bag or doubled cheesecloth. * Keep the almond pulp as flour for baking (um, almond chocolate chip cookies anyone?)
