Last night's dinner - Healthy Fajitas/Tacos/Salad! YOU choose! • 4 big Boneless skinless chicken breasts (or a few packs of boneless skinless tenderloins, whatever chicken you want to buy) • onion and bell pepper • Taco Kit of hard or soft shells (you pick) • Low Sodium Taco Seasoning packet (I used this one instead of the one that comes in the Taco kit) • Shredded lettuce, chopped tomato and cheese all optional toppings. • Cook chicken, onions, bell pepper, low sodium taco seasoning in crockpot on low 7-8 hours. The guys in the house put their fajita chicken in hard and soft taco shells. Tacos and fajitas! I made a salad out of mine (cut carbs leaving out the hard/soft shells) - lettuce, tomato, and the fajita chicken - Bam! Salad! My quick, easy, go-to when I'm not sure...EGGS! Start with coconut oil in sauté pan, add chopped fresh raw kale, onions, mushrooms. Sauté a little then add eggs, scramble together. Meanwhile cook turkey bacon in microwave then top over cooked egg scramble. Add whatever seasonings you like. Today's #green smoothie: Handful kale, 1 whole apple, 1/4 inch fresh ginger root, sprinkle of chili powder, sprinkle cinnamon, 1 tsp hemp powder, 1 tsp brown rice powder, ice, water. Bam! There ya go! Use whatever protein powder you like. I have a few different ones so I mix mine up. If you need it sweeter, add some local honey or agave nectar.
