Trying to eat #healthy can be very hard in this day and age, especially eating a healthy breakfast. But add a few #eggs, a #zucchini, and some sliced #ham and you're on your way to a #delicious open faced #omelette #breakfast rich in #energy and #protien that will get you through the day. A morning #diet done right. Add a little #sriracha on top and all will be right with the #world.
I attempted to make my own #homemade #baked #potato #chips. Half #flavored with #sriracha and #paprika and the other half with #italian #herbs. Sadly the attempt #failed and what came out was #delicious baked potatoes, not baked potato chips. I think I'll need to #invest in a good #mandoline. #tasty #food nonetheless.

A Frittata in History
Where does the frittata come from? A haunting question that eats away at the soul and has the potential to speak to the human condition.
Does anything really come from anywhere? Are there beginnings? Are there endings? All energy in the universe can never be destroyed and so nothing is ever new. We are stardust being recycled, our food is stardust, our thoughts are stardust drifting and sparking with an electric jolt. So where does the frittata come from? Spain of course, or does it?
The real question to be asking is what came first, the chicken or the egg? In my books the egg came first and with that first historic egg came the frittata. The word frittata has differing meanings but the one I like the best is, ‘to make a mess, or someone who is a little nuts’. And frittatas are Lionel (AKA Messi). They don’t even exist on a large scale in Spanish and or Italian restaurant menus (according to the interwebs), because they are the meal of the lower class farmers that want to use their leftovers. Just like fried rice, they are the dish made by locals that put everything and the kitchen sink into one easy to chomp meal.
The best foods always seem to come from the farms, like water from the source, always the sweeter. Farmers grow and raise the food that we eat, it’s only fitting they create the building blocks on delicious cuisine. And a frittata is the foundation for deliciousness. It can be made into anything, it can feature everything, and it can party from dusk till dawn. Breakfast? Frittata! Lunch? Frittata it up! Dinner? Frittata me! Add a garden of vegetables, assorted cheeses, and a spice shop. Just go wild and a little nuts!
One always needs a little frittata in their lives.

Mint Chocolate Chip Coffee Chocolate Cake – Recipe
Valentines Day has never been one of my favorite holidays. It has always reminded me that I’m alone, but this time around I’m going to embrace it. I’m going to embrace my freedom and I’m going to embrace how wonderful love is.
Yes this day banks on romantic love, but it doesn’t have to. Love comes in many forms. Love for family, love for friends, and most importantly love for oneself. I’ve had trouble with this in the past, especially on this day. I did not feel sad because I was alone I felt sad because I thought I was not good enough to be loved. But I’m turning a new leaf and telling myself that I am lovable.
So I say to anyone reading this, treat yourself on this Valentines Day. Go out, see the world, people watch the annoying couples and eat cake. Eat this delicious Mint Chocolate Chip Coffee Chocolate Cake, MC⁴ for short, and be your own Valentine.
Ingredients
• 1 ½ cups sugar
• 1 cup canola oil
• 1 cup milk
• 1 cup brewed coffee (room temperature)
• 2 eggs
• 1 teaspoon mint extract
• 2 cups all-purpose flour
• ¾ cups cocoa powder
• ½ cup chocolate chips
• 2 teaspoons baking soda
• 1 teaspoon baking powder
• 1 teaspoon salt
• chocolate frosting
• sprig of mint (optional)
Directions
1. Mix together the sugar, oil, milk, coffee, eggs and mint extract until it’s combined. Gradually add the flour, cocoa, baking soda, baking powder and salt to the mixture until you have a thick batter. Mix in the chocolate chips at the end.
2. Pour the mix into two greased and floured 9 in. pans. (I used three ramekins and one 9 in. pan). Bake at 325 degrees Fahrenheit (160 degrees Celsius) for 25-30 minutes or until a knife or toothpick inserted near the middle comes out clean. Bake for 17-25 minutes if you use the ramekins.
3. Once the cake has cooled off you can add some frosting, I just used store bought chocolate frosting. If you use the two 9 in. pans you can start by cutting off the top of one of the cakes. Just cut off enough for the cake to be flat. Add a layer of frosting on the flat top and then place the second cake on top of it. Add the rest of the frosting to the cake. For added decoration add some left over chocolate chips, a dusting of cocoa powder and a sprig of mint to go on top.

Chick Pea Pancakes.
Like Hundreds of times before I was left with the egg whites, but today was going to be different. Nine times out of ten I will toss out the egg whites, because I saw no use for them, they clearly weren't needed in the recipe I was working on in that moment, but I was always left with that tinge of guilt for having thrown away food. SO, today I decided to save the egg whites from oblivion and make Meringue Cookies! How hard could it be?
I scoured the compendium of knowledge in search of guidance, but there were too many voices, I couldn't make out the proper path. Perseverance won out and I found the best way to make Meringue Cookies.
Step 1: Whisk
If you have a mechanical beater, use it, otherwise stretch out your best arm and prepare to whisk up a frenzy.
I used two egg whites, because that was what I was left with, but this recipe can easily be expanded upon.
Ready, set, whip! Whip up the egg whites until they are white a fluffy. you'll know when they're done when they create sturdy, fluffy peaks when you pull up the whisk. Half way between this process add 1 tablespoon, more or less, of vanilla extract (Add any flavor extract you want).
The oven should have been pre-heated to 200 degrees Fahrenheit at this point.
Step 2: Sugar Overdose
The recipe I found called for 1/4 cup of powdered sugar for each egg white, it was a little too sweet for me, but it might be fine for you. Add less powdered sugar if you want. Dust the powdered sugar over the whipped egg whites and folded it in, once its all mixed in whisk it up a little more.
Step 3: Bake or Dry, Either One
You're now ready to bake! Now, every Meringue Cookie I saw on the inter-webs were picture perfect, like little fluffy princess cookies. My version calls for a more rustic approach. Grab a spoon, scoop up some of the now Meringue and plop it on a baking tray lined with wax paper. If you twirl the spoon on top of the dollop and pull it up and out you might get the teeny tiny curly q's.
Bake the Meringue Cookies for an hour and a half, but watch them like a hawk. My first batch burnt, because I didn't realize the temperature was too high. Essentially you are not baking, you are drying. the low heat is removing the moisture from the Meringue Cookies, leaving them light and crunchy.
Once the Meringue Cookies are done turn off the oven and place them in a dry place for a few hours. I just left them in the oven with the door open a crack and forgot about them.

Recipe
Roasted Red Potatoes - deliciously warm comfort food.
Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius). Wash potatoes. Quarter potatoes and add to a bowl. Add a glug of olive oil. Sprinkle a dash, or two, of sea salt and ground pepper. Spice things up with a couple pinches of cayenne pepper, paprika and turmeric. Mince a clove or two of garlic and toss it in with the potatoes. Mix everything up until every inch of ever 'tater is covered. Place the 'taters in a baking pan/dish/mabober. Get every ounce of the flavorful oil out of the bowl and in with the 'poh-tay-toes'. Bake for 40 to 45 minutes.
If I'm not careful I can eat a whole bushel of these scrumptious 'taters.
