You can start your day off right with these tasty and filling savory breakfast crepes. They will become a breakfast favorite because they are filled with cheesy, ham, and vegetable mix.
Ingredients: 1 cup all-purpose flour. 2 large eggs. 1 1/2 cups milk. 2 tablespoons melted butter. 1/4 teaspoon salt. 1/4 teaspoon black pepper. 1/2 cup grated Gruyere cheese. 1/2 cup diced ham. 1/4 cup finely chopped fresh spinach. 1/4 cup finely chopped red bell pepper. 1/4 cup finely chopped red onion. Cooking spray or extra butter for cooking.
Instructions: Put the flour, eggs, milk, melted butter, salt, and black pepper in a blender. Mix everything together until it's smooth. Do not mix the crepe batter for 20 minutes. This will help any air bubbles settle. Put a nonstick skillet on medium heat and use cooking spray or a little butter to lightly coat it. Put a little of the crepe batter into the pan and swirl it around to cover the bottom of the pan evenly. For one to two minutes, or until the bottom is golden brown and the edges begin to lift, cook. The crepe should be cooked for an extra one to two minutes on the other side, until it's set and lightly browned. Take the crepe out of the pan when it's done, and do it again with the rest of the batter. There should be eight crepes. To put it together, put a tablespoon of grated Gruyere cheese on top of each crepe, then some diced ham, chopped spinach, red bell pepper, and red onion. To make triangles, fold the crepes in half and then in half again. For a short time, put them back in the pan to melt the cheese and warm up the fillings. Enjoy your tasty breakfast crepes while they're still hot!
