Sooo Owen's speech during the town, about the few immediate surviving adults bringing all the children to the castle and it being torched it down with all of them inside.

I'm fully taking that as canon implication that he did it. He slaughtered all those innocent children and the surviving adults desperate to save the youngest in one of the torturous and painful ways to die, and ensured not a single one of them left it alive, hence why he knows the exact number of people he murdered in his rage.

(Aside from maybe just killing everyone in sight and then going “ah well this place had a population of 2,801 last census so minus Louis and I, means I've killed 2,799!” which imo could be definitely more likely but also feels a lil silly in comparison to his whole point of this episode being where he finally drops his act and bears his fangs.)
