I love fruit, but I struggle to get protein in. Stirring some quinoa into your fruit salad is a great way to add texture AND protein!
Chocolate for breakfast!
Protein-Packed Lentil Soup
Olive/coconut oil 2 cloves garlic 1 onion 2 carrots 2 celery stocks 1 tsp oregano 1 tsp basil 1/2 tsp paprika 1/4 tsp cayenne pepper 1/2 tsp salt 1 can black beans 1 cup brown lentils 1 can crushed tomatoes 4 cups vegetable broth
Over medium heat, sautee garlic and onion in oil until fragrant.
Mix in vegetables and allow to cook 3-4 minutes.
Add in beans, tomatoes, lentils, and seasonings, and broth.
Increase heat to high and bring soup to a boil.
Turn heat to low and allow to simmer thirty minutes.
Serve with a side of quinoa for a protein-packed, vegan meal!
(I’ve recently been paying more attention to my macros, and I’ve found myself not getting enough protein (as is often a problem among vegans). This is a great way to get lots of protein in a delicious, vegan soup!)
Black Bean Brownies (10-12)
1 1/2 cups black beans 2 tbsp cocoa powder 1/2 cup oats 1/4 tsp salt 1/2 cup sweetener (honey, syrup, agave, etc.) 1/4 cup coconut/vegetable oil 2 tsp vanilla extract 1/2 tsp baking powder 2/3 cups semisweet chocolate chips
Preheat oven to 350 degrees F.
Blend all ingredients except for chocolate chips until smooth.
stir in chips and pour into greased brownie sheet.
Bake 15-20 minutes.
(I was skeptical trying out this recipe at first, but by goodness, I didn’t even notice! These are such a good way to omit flour and sneak some protein into your diet!)

Stuffed Sweet Potatoes (2)
2 sweet potatoes 2/3 cups black beans 1/2 cup corn Pinch of cumin 1/4 teaspoon chili powder Lime Salsa 1/2 avocado Cilantro
Preheat oven to 400 degrees F.
Scrub potatoes and pierce several times with a fork.
Bake 45 minutes.
Meanwhile, combine beans, corn, seasonings, and lime juice in a mixing bowl.
Once potatoes are thoroughly baked, split potatoes and fill with mixture.
Top with salsa, diced avocado, and cilantro to taste.
(I love myself some sweet potatoes! This is such a colorful, beautiful dish that keeps me full until morning! Feel free to get creative with the filling, using a variety of whole, clean foods.)
Sweet Potato and Carrot Mash (4-6)
4 carrots 2 sweet potatoes 1/2 cup applesauce 2 tbsp butter (optional) salt
Place carrots in a pot over high heat, bring to a boil.
Add potatoes.
Allow to simmer 25 minutes.
Drain and mash to combine.
Stir in melted butter (optional), applesauce, and salt to taste!
(This recipe is a great way to add color and brightness to your plate! Remember, we eat with our eyes first.)
Tonight’s delicious, low calorie, nutritious dinner. Yum!

Quinoa Fruit Salad (5-6)
1 cup uncooked quinoa 2 cups water 2 tbsp lime juice 3 tbsp honey 5 cups assorted fruit of your choice
Bring quinoa and water to a boil, then cover and let simmer 15 minutes.
In a separate bowl, whisk lime juice and honey together to create dressing.
Combine fruit with dressing.
Stir in quinoa.
Let chill before serving.
(This makes such a good breakfast! Whole, real foods will leave you energized throughout the day.)
Super Easy Studying Snack
Hey everyone!
So I was kinda bored studying for finals, so I decided to make something to eat. I ended up with this! If you’re starving while studying or just need to be productive while procrastinating, this is the recipe for you :)
Here’s what you need…
1 cup blackberries
1 banana, sliced
1 small container of vanilla Greek yogurt
Ice if desired
3 tablespoons wheat germ, plus more to sprinkle on top
Handful (or so…) of dark chocolate chips to sprinkle on top
Combine the blackberries, banana, yogurt, and ice into a blender and blend until smooth. Sprinkle more wheat germ and chocolate chips on top.
Here are the benefits from the ingredients:
Bananas: Full of potassium, vitamin C and B6 to fight off that dreaded cold you always get before finals week
Blackberries: Powerful antioxidants, vitamin C and are thought to improve memory
Greek yogurt: Great source of protein to keep you full
Wheat germ: Good source of fiber, protein, and B vitamins to keep you going

DIY Almond Milk (2-4)
1 cup almonds 2 cups water
Soak almonds in water overnight.
Strain and rinse.
Blend almonds and water until almonds are extremely fine.
Strain almonds in cheese-cloth (or a thin, clean cloth), collecting the resulting almond milk in a container for storage.
Sweeten if desired.
Let chill!
(Who knew making your own almond milk was so easy? Feel free to make a larger batch using a consistent 1:2 ratio of almonds to water!)
Easy Vegan Pudding (1-2)
3 tbsp cornstarch 2 tbsp water 1 1/2 cup dairy-free milk Dash of vanilla 1/4 cup sugar 1/4 cup cacao powder
Mix cornstarch and water until forming a paste.
In a saucepan over medium heat, combine paste and other ingredients together.
Stir constantly until mixture thickens.
Remove from heat.
Let sit five minutes, then refrigerate until completely cool.
(Cruelty-free way to satisfy those pesky,irresistible sugar cravings)
Vegan Overnight Oats (1-2)
1 mashed banana 2 tbsp chia seeds Dash of cinnamon 1/2 cup rolled oats 3/4 cup dairy free milk Dash of vanilla
Mix mashed banana, chia seeds, and cinnamon together in mixing bowl.
Add oats, dairy free milk, and vanilla.
Leave in refrigerator overnight.
Stir and garnish with your favorite toppings!
(Overnight oats are essential for the busy vegan! Mix it up by stirring in cacao powder, fruits, granola, etc.)
Mango Bread (6-8)
1 cup whole wheat flour 1 tsp cinnamon Pinch of salt 1 tsp baking soda 3/4 cup agave, honey, or sweetener of your choice 1 egg 1/4 cup coconut oil 1 1/2 cup chopped mango 1/2 tsp lemon juice 3 tbsp raisins
Preheat oven to 350 degrees F.
Combine all dry ingredients
Mix and add egg and oil.
Stir in mango, lemon, and raisins.
Pour mixture into bread pan and bake one hour.
(This sweet and savory bread will take your tastebuds to the tropics!) (PROTIP: For vegan baking, feel free to substitute applesauce for eggs! 1 egg = approximately 1/4 cup applesauce.)
Strawberry Scones (8)
2 cups (almond) flour 1/2 tsp baking soda 1 whole egg 2 egg whites (or 3/4 cup applesauce) 2 tbsp honey 1 tsp lemon juice 1/2 tsp salt 3/4 cup strawberries
Begin by preheating oven to 350 degrees F. Combine all ingredients and, using hands, mix well. Transfer to a floured surface and flatten into a thin square. Cut the square into fourths. Cut each fourth in half, making triangles. Transfer triangles to baking sheet. Bake fifteen minutes, then allow to cool.
(These make me so excited for spring! They make an excellent, sustaining breakfast or a splendid sweet treat after dinner! Best part, each scone is under 200 calories!)
