Rainbow veggies to create a stir fry dinner
Favorite dinner from this week! Courgetti/zoodles and also spiralised carrots with red onions sautéed with mushrooms then mixed with soy sauce/ tamari, ginger, chili, peanut butter, garlic, salt and pepper and a lot of lime and coriander to make a delicious veggie pad thai-esque meal 🍜
I was really wanting a warm crumble this morning but I don't have the right baking tray at uni for it - on my list for Christmas! But I got around it by mixing oats, seeds, walnuts, cinnamon, and date nectar and then toasting it in a frying pan with a bit of coconut oil to make a yummy quick granola! I used it to top some stewed apples and berries I had in the freezer
Another autumn day, another autumn breakfast 🍎 this is my "carrot cake" oatmeal! It's just oatmeal topped with grated carrot and apple, sultanas, walnuts, seeds, cinnamon, ginger, lemon juice and a drizzle of date nectar #simple
We always have a pancake Sunday brunch at home, a tradition I try to keep alive at uni! I topped mine this morning with cooked up seasonal apple sauce, berries we froze this summer, a peanut butter and date nectar sauce, walnuts, and sprinkle of cinnamon.
These banana pancakes are simple and inexpensive (cost me less than £1 for this meal!)
* As many ripe bananas as you have (make sure they are nice and mushy!)
* Oats - I like to have a mix of ground and whole for texture (this flour element can be a mix of any flours really, except like gram flour or a lot of rye flour as these have a strong flavor and will over power the taste! Almond meal is a great alternative as it compliments the banana.
* Flax seed - this is not necessarily needed but I have a mixture of chia and flax seeds which gives the mixture some elasticity (an egg replacement) and adds extra nutrition! I usually don’t use more than a tsp unless you are making a big batch
* Baking powder/baking soda
*Flavorings - I usually add vanilla and cinnamon
Blend up the bananas and then add the oats until it becomes thicker. Wait a minute or two whilst the oats soak up the liquid and then judge if the mixture needs more thickening. Note, if you are using chia/flax seed then add it now and wait another minute or so! Add the raising agents and heat up the pan. Use a non-stick pan if you can, if not then I recommend using coconut oil to fry the pancakes in as the coconut works well with the banana taste! You can use rapeseed oil too as this doesn’t add a flavor whilst still being full of nutritious benefits

Walnuts - (I got at reduced so they were soo cheap)- 4p
Apple sauce & Berries - Free from the garden at home!
The peanut butter and date sauce is simple too!:
- Peanut butter (I recommend Meridian or a similar brand that is completely from peanut with no added ingredients)
- Dates nectar (You can use your own cooked up dates too- just simmer dates and water in a pan on a low heat until soft and then blend up)
I just added water to the peanut butter and microwaved it on a low heat, then mixed well and added the date syrup!

Not quite a beautiful looking dinner, but a very tasty one of mixed leaves, cherry tomatoes, cucumber, pepper, and avocado salad topped with sautéed carrots, zucchini and broccoli with tahini and balsamic vinegar
Guacamole on sourdough toast with roasted peppers&aubergines and a mixed salad
Not the prettiest looking smoothie bowl...but certainly was tasty! The days are getting colder so it is almost porridge season but making the most of the warmer autumnal days

So many fresh tomatoes in my mom’s garden at the moment. I topped her rocket and salad leaves with warmed tomatoes, courgette, carrot, beetroot and then added even more cherry tomatoes and a few pumpkin seeds and pepper. No dressing or sauce needed - just the good fresh flavours. (only things not grown in the garden were the pumpkin seeds and pepper!!)
Amazing black bean noodles! Such a great new thing I have found that add extra protein to my stir-fries. Of course I had to add broccoli (the best vegetable dipped in tamari) and kale for even more protein and iron
Can’t start the day without a good cup of tea (usually green). Today I topped my fruit with a quick almond vanilla granola!
