It's Friday the 13th, what's cooking in the kitchen?
Tonight we made a delicious casserole dinner, with salad, meatballs, and banana loaf for dessert.
The casserole was made with elbow noodles, tomato chunks, cottage cheese, and a savoury home made cheese sauce, all topped with a dash of garlic powder and bread crumbs masking the top.
Cook the pasta noodles for 8 minutes in boiling salted water.
All the ingredients were mixed together in a casserole dish and baked at 350 degree Celsius for 20 minutes.
The cheese sauce used in the casserole was made with half a block of sliced aged cheddar, and I made a rue consisting of 2tbsp of butter, 2tbsp of flour, and half a cup of 10% table cream. Using a whisk constantly stir at a low stove top temperature. Note - cheese will burn if you do not monitor your sauce.
The salad was made with baby spinach (or romaine lettuce), sliced carrot, celery, granny smith apple, feta cheese, chopped walnut, and green onion. After all of this, the salad was garnished with fresh Italian parsley.
The dressing for the salad was half a cup of Renee's ceasar salad dressing, half a cup of half the fat Hellman's mayonnaise, half a freshly squeezed lemon, and a quarter cup of 10% table cream. This was all whisked up to create a scrumptious tangy salad dressing to die for.
The meatballs were crafted with1lb medium ground beef/1/2 pound lean ground turkey, chopped white onions, dashes of salt, pepper, and garlic, 2tbsp of mustard, 1/4 of a cup of pasta sauce (any kind you prefer), one large whole egg, bread crumbs (any kind, you can make your own or store bought works as well), and finally a 1/4 cup of shredded parmesan cheese. If you don't want to add the spices, you can substitute them for a pack of Lipton's Onion Soup mix.
Optional : 1/4 tsp of nutmeg , and freshly diced Italian parsley or green onion
Knead all of the ingredients very well with your clean hands, or mix with wooden spoon. Take a large spoon full of the mixture and create meatballs. Place your meatballs on a lightly greased baking tray and put a 1/4 cup of water at the bottom of the pan. Bake for 50 to 60 minutes at 350 degrees Celsius. (cooking time depends on the sizes of your meatballs) Keep an eye on your meatballs LOL, every 15-20 casually turn them over.
