Ingredients: 2 cups semisweet chocolate chips. 1 can 14 ounces sweetened condensed milk. 1/4 cup unsalted butter. 1 teaspoon vanilla extract. 1/2 cup crushed peppermint candies. 1/2 cup white chocolate chips.
Instructions: Put parchment paper around the edges of an 8x8-inch baking pan, leaving some overhang to make it easy to take off later. Put the semisweet chocolate chips, sweetened condensed milk, and unsalted butter in a bowl that can go in the microwave. To make the mixture smooth, microwave it for 30 seconds at a time and stir it each time. Do this until the chocolate and butter are completely melted. Add the vanilla extract and mix well. Spread out half of the chocolate mixture in the pan that has been prepared. This is the top layer. While the first layer is still warm, sprinkle the crushed peppermint candies on top of it. For about 10 to 15 minutes, put the pan in the fridge to let the first layer set. While you wait, melt the white chocolate chips in the microwave 30 seconds at a time until they are smooth and melted. Take the pan out of the fridge and pour the melted white chocolate on top of the layer of peppermint. Spread it out well. The second layer is here. Put the pan back in the fridge and let it set for another 10 to 15 minutes, or until it's firm. After the fudge has set, use the extra parchment paper to lift it out of the pan. Use a sharp knife to cut the fudge into squares or rectangles. Serve your Layered Chocolate Peppermint Fudge and enjoy it!

Instructions: Preheat oven to 180C 350F. Melt the dark chocolate and butter together in a heatproof bowl over a pot of simmering water, stirring until smooth. In a separate bowl, whisk together the eggs, coconut sugar, and vanilla extract until well combined. Gradually pour the melted chocolate mixture into the egg mixture, stirring continuously. Sift in the spelt flour and gently fold until just combined. Gently fold in the fresh raspberries. Pour the batter into a lined baking dish and spread evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Allow the brownies to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice into squares and serve.
