Udon Stir Fry
Quick and easy weeknight meal; salty, spicy, and delicious!
Sunday Brunch, date day edition! We went to Zake’s Cafe and shared Lemon Ricotta Pancakes and Breakfast Burrito. Perfect sweet and salty combo.
We are big fans of the Frontera brand enchilada sauce so decided to give their other products a try. We used their taco skillet sauce to sauté some chickpeas, then layered them with spinach and cheese and made a quesadilla! It was delicious and added an extra kick so a standard quesadilla.
We were excited to come across a meat-free mulligatawny soup, inspired by one of our favorite classic Seinfeld episodes! What would Elaine think?

Since our trip to New York a few months back we’ve been planning to try our hands at Udon Soup. We finally found a good recipe on Produce On Parade for Veggie Miso Udon Soup!

A stick to your bones meal type of night...Coconut Curry Lentils & Potatoes. This is a great alternative to doing an overly fatty or starchy dish! We have made this previously but this time we tried green lentils which have a slightly firmer consistency than red.

The recent blizzard’s snow is finally starting to melt and how better to celebrate than a simple dish of cheesey-scramblers & potatoes! This is ‘chef c.j. speciality’ & is very cheap and simple for a quick filling start to the day.
Woke up this morning - 8:30am BreakfastTwoday - 9:00am
Ingredients: (for two) 2 eggs 1 medium sized potato 1/4 cup cheese (shredded sharp cheddar above) 1 tbsp olive oil 1 tsp dried minced onion a dash of garlic powder salt & peper to taste Suggestions: a dash of cayenne or cumin to the potatoes will give them another layer of flavor if you want a little something more. Directions: 1. Heat oil in a medium sized pan 2. Chop potato into desired sized cubes, add to pan & toss to lightly coat with oil 3. Sprinkle on the minced onion, garlic powder, salt & pepper, toss again and let cook stirring or tossing occasionally until reach desired browning & crispiness (ca. 8 mins) 4. Prepare egg as desired (above are simple scrambled eggs sans milk, although you can add about 2 tbsp per egg to make more fluffy) 5. Place the egg atop the potatoes and add toppings (cheese, scallion, onions, etc.) cook until cheese melts 6. Scoop. Plate. Serve.

Delicious ‘post-ice skating’ mean! We went for a lovely afternoon in Philly, where we watched the sunset while ice skating at Penn’s Landing river rink. Then we walked the Market Street bridge to the Revolution House for dinner where we had shared their guacamole with malanga chips & calamari. Followed by C.J. having their pork sandwich(not pictured) and Kelsey had they house made veggie burger & wine!

As many people know the east coast of the u.s. has been hit with a huge winter storm and we spent the weekend snowed in! What better to do than make Pumpkin Pie Cinnamon Rolls? These are amazing and taste just as good as your favorite breakfast treat!
