Good Morning! It's time to rise and shine-- And what a better way than to start your day with a simple yet cute breakfast!
Eggs in a Basket is quick and easy to make in 15 minutes or so (including prep time). I learned this recipe from one of my gal pals and I've been making it ever since.
2 slices of your choice of bread
1 1/2 tablespoon of butter
1 tablespoon of Peanut butter
1) Place butter onto a pan and melt it on Medium heat. While that is happening, take your 2 slices of bread, and cut any large shape into them-- if you cut out a shape too small, YOUR EGG WILL OVERFLOW, making you very sad. (no one wants to be sad eating the most important meal of the day! So take heed to my warning-- trust me, I would know from experience). For my version of Eggs in a Basket, I cut out a heart ♥.
Be sure not to discard the excess pieces, for we don't want to waste them. Plus, they will be used to make a mini PB&J sandwich to complete this awesome breakfast.
2) Once the butter has completely melted and the pan is warm enough, toss in your excess bread to toast it to your liking. After flipping 1-2 times, take them off the pan and set them aside.
3) Place your hollow slices of bread onto the same pan, and gently crack 1 egg into each cut-out (Aggressively cracking your egg might result in popping the yolk!). Let each slice sit on the pan for a minute or so, then flip.
Flipping is not necessary for this recipe, it is just a matter of preference. I like my eggs over-easy, plus, if you don't flip your Egg in a Basket, 1 side of your bread will remain soft from not being toasted.
4) As you let your Eggs in a Basket cook, add PB&J to the little toasted pieces of bread. Aren't they cute!?!
5) Place you Eggs in a Basket onto a plate once it is finished cooking. Cook time can vary depending on how yolky you want your egg to be. Alongside the Eggs in a Basket, place a sliced up a banana and your mini sandwich onto the same plate.
VOILA! Your simple and cute breakfast is complete!
Notice that if you cooked your Eggs in a Basket thoroughly (regardless if you flipped it or not) the edges of the egg would have fused with the bread, preventing it from falling out.
Making the mini sandwich and choosing a fruit is completely up to you! PB&J and a banana were just ingredients I had readily available.

Beware that it can get messy! Don't be a dingdong like me and eat this without a napkin.
