I see what you mean about him being respectful towards King and everything. When I called him arrogant and stuff I primarily refered to how he acts towards the guys from Rusteeze, bc they genuinely seem to like him and he isn't very nice to them, which seems to be because they are old. And, he is pretty mean to his crew as well, obviously prioritizing success over not-hurting-other-people. And, he I don't rember what exactly it is he says to Sally, but it's definitely misogynistic, but is it harrassment?
You are definitely 100% right that this is probably because a.) he was hurt in the past (I don't know about his backstory. Would you tell me, where I can find out more?) and b.) because wearing that mask is taking it's toll on him.

My point was primarily, that hus development happens so quickly and goes that deep.
Like, he really seems to have internalized that idea of showing only this mask and not letting anyone close, so it's really amazing, that just a few days are enough to turn (or return) him into this kind, loving person and that he opens up (especially to Mater) that quickly. And, that his kindness goes so deep and comes so naturally.
The fact, that it happened so fast really emphasizes what a good, kind character he has been all along Definitely the best
And, yes, it is so amazing how Doc sees McQueen as proof of everything he believes about the racing-world and then later they get the most beautiful mentor & student relationship
And, yes, his growth in 2 is amazing. I didn't feel like he grew alot due to not really being the main-character (I love how his expression immediately changes to angry when Francesco is insulting Mater and all those little scenes that show that he is such a great character even at the begining) but, growth definitely happens and both movies are just written incredibly good and you can't not love it
Thanks for clarifying stuff about Cars 3. I remembered 1 and 2 from my childhood and 3 came out when I was much older (I lost faith in sequels that came out much later. I saw so many bad ones) and I watched 3 in the theater and the only thing I remember is that I didn't like it (but, I was, like, 13, so realistically that means nothing). I might give it a try, when you say, it's good. Not, that I'd remember the finale, but what alternative ending? (I'm asking so many questions! I'm so sorry!)
