Say no more! Here’s my favorite (go-to) red coconut curry recipe with tofu-nuggets (under the cut) <3

For two people / 3-4 servings you’re gonna need:

- 1 big red onion - 2 pak choi (small) or just 1 big one - 1-2 tbsp red curry paste (some more if you want it spicier) - 1 can of chickpeas (roughly 300g) - 1 can of coconut milk (400ml) - 50ml of water - sugar, salt and pepper - (optional) lemon juice

Tofu: - some basic tofu - 1 egg - a little bit of flour - and breadcrumbs

The tofu is really easy. You just cut up the tofu into small cubes and then bread it (coating it with flour, then egg and then breadcrumbs) And then you fry them until they’re nice and crispy!

The Curry: 1. Peel and chop up the onion into small pieces. Wash the pak choi and cut it up into stripes (or small pieces; it doesn’t really matter). Put them aside. Wash your chickpeas, put them aside.

2. Heat up some oil in a pot. Once the oil is hot, put in the onions and lightly sauté them.

3. Now add the red curry paste to the onions and sauté them on medium heat.

4. Add the pak choi and the chickpeas.

5. Now add the coconut milk as well as the water

6. Let it simmer for 6-8 minutes on low heat.

7. Season the curry with salt, pepper, a pinch of sugar and if you’re feeling fancy (and I recommend this) add a bit of lemon juice!

If you want it a bit more spicy, add some chili-powder/flakes!

Serve the curry with some rice (optional) and your prepared tofu!
