The Burger & Bison Burger - Omni Park West
Howdy gang!
Been awhile since I’ve posted on here and that’s mainly since I’ve started a new gig. Loving it and will expand my horizons for burgers nationwide!
Let’s dive in, shall we? I recently had the pleasure of having lunch at Omni Park West with Cindy their sales manager and their executive chef, David Secrest, paid a visit to our table as well.
I opted for the Bison burger primarily because bison and the poblano relish sounded like it would be my jam. David stopped by, we chatted abut burgers in Dallas and offered to bring me their house burger in addition to the bison.
Burger arrives, I waste no time and lay waste to it. Served open faced with two patties covered in cheddar cheese, it’s game time. Since I’ve only had bison one other time and it has been years, I had forgotten it is a leaner meat and tends to be more on the dry side. Should I try bison again, I would suggest medium rare as opposed to medium.
Did I mention it comes on a brioche bun that is made from scratch on site? Oh I didn’t? Well, it is. And damn, that bun was good! The poblano relish definitely had some kick and added quite a bit of flavor to the burger.
Minutes later, burger #2 arrives and of course, I need at least a bite to see what all the fuss is about. You’re looking at tomatoes, onions, cheddar cheese, thick cut horseradish pickles (so. friggin. good.) and of course that classy dame that is the brioche bun.
I descend upon it and immediately I’m brought back to burger nirvana. There’s the flavor and the juices I’m used to tasting! Now granted, I had to take it to go since I had filled up on bison but it was quite the treat.
Now as most of you know, I’m always open to trying new things, different types of beef, toppings, etc. Bison wasn’t what I was hoping for but I encourage you, dear reader, to at least try it and make your own decision on it. The Burger though? Go get it. Order the spinach artichoke dip while you’re at it because holy wow was it incredible.

Howdy gang! Been awhile. Finally made it down to Henderson area to get my burger on. What better place to do that then the new joint right next to Veritas & down the street from Capitol Pub? This place hasn't been open too long but it's incredibly packed and there are PLENTY of options for beverages. Of course yours truly did Revolver Blood & Honey (because hey, it's a damn good beer) to start it out and then came the burger. Topped with bacon, BBQ sauce, a fried egg (I swear I don't have a problem, I can stop anytime), and cheddar cheese, I was ready to partake. First off, I should have requested medium because it was a little done for my taste. While not a contender for Top 5, definitely a tasty number for my palate. The burger runs $10 and combined with my multiple beers, tab ran me about $30 (not too shabby). I'd have written this sooner but got a little carried away last night. I'd say if you want a good people watching venue with delicious food & beverages, I'd stop in & get you some! Food that is. Perverts. Til next time! And as always, if you've got a burger spot for me to check out, let me know. -ETB
