HURRY UP - ARTICHOKE SEASON ENDS IN A FEW WEEKS ! NOW HOW ARE WE PREPING THOSE BABIES TONIGHT?! . You guys know how much I love fresh ‘anything’ ! And Saturdays are my favorite days for markets. I go and pick whatever fresh produce I find, and then think of how I am cooking this. 👩🏻🍳 Harvesting of artichokes starts in the fall and continues until spring in the months of March up to May, artichoke's peak production. That's the time when they are huge and super fresh. Nutrition wise, it is the perfect combo, it almost replaces a whole meal, as it is full FIBER. One medium artichoke has a whopping 6 grams of dietary fiber – that's a quarter of the recommended daily amount – and more fiber than in one whole cup of prunes! It has PROTEIN. Artichokes contain 4 grams of protein – a significant amount for a vegetable. It contains PREBIOTICS and a great amount of ANTIOXIDANTS. Cooking it with olive oil or drizzling olive oil on it will help absorb all those healthy antioxydants that are not assimilated by our body through water or food with zero fat. I always use DELICATESSE olive oil for artichoke, I really do like the mildness of it on artichokes! . Still thinking about how to cook these beauties, roasted maybe ?
