Ingredients: 1 lb large shrimp, peeled and deveined. 2 tablespoons olive oil. 3 cloves garlic, minced. 1 cup orzo pasta. 2 cups chicken broth. 1 lemon, zest and juice. 1/4 cup grated Parmesan cheese. 2 tablespoons chopped fresh parsley. Salt and black pepper to taste.
Instructions: Warm up the olive oil in a big pan over medium-low heat. For about one minute, until the garlic smells good, add the minced garlic. It will take about two to three minutes on each side for the shrimp to turn pink after you add them. Take the shrimp out of the pan and set it aside. Put orzo pasta, chicken broth, lemon zest, and lemon juice in the same pan. Once it starts to boil, lower the heat and let it cook for about 10 to 12 minutes, or until the orzo is done and the liquid is absorbed. Grate Parmesan cheese and chop up parsley and add them to the dish. To taste, add salt and black pepper. Serve hot, and if you want, top with more parsley.
