I apologise about the lack of actual portions, but I figured I would share with the world how I make stove top (or stovetop, however you like to spell it really) tea lattes before the idea disappears (plus I don't really post things, so this is a good start).
A tea; For the last one I made I used STASH's "Holiday Chai" Tea
Milk; I use 1% partially skimmed, I would use soy if I had some
A sweetener; For the "Holiday Chai" one I used German Rock Sugar, and also some Stevia low-calorie sweetener. I also prefer to use maple syrup, honey, or really anything except white sugar
Spices (optional); I used Cinnamon to give it a little more flavour. Plus, I love Cinnamon
Estimated Time: 30-45 minutes, if you've got the patience
1. Pour milk into a saucepan. Use just over about a half the amount of milk as you want beverage in the final product. Heat over LOW heat (and when I say low, on a scale of 1-10, 10 being the max, I used from 1, and then towards the end when I could watch it better and stir more often, 3) Watch to make sure the milk does not burn, and stir often. This will take a lot of time if you don't want to burn the milk, so I recommend throwing on some music.
2. When the milk is warm to desired heat, brew the tea in just under half of the amount of beverage that you want in the end. If using a teabag, do throw out the bag after (although I'm not sure if my method makes a difference), and if loose leaf, try to brew more tea leaves than you would regularly use for the amount of tea being brewed. Do not over steepen as it will make the tea bitterer.
3. When tea is steeped (if that's correctly spelt), pour into the saucepan with the milk. I put the teabag in the mix to try to get it to absorb more of the taste (Mostly because I didn't let it steepen long).
4. Add the sweetener (half a packet of Stevia and five chunks of German Rock Sugar) to taste. In addition, if spices are desired for flavour add, now. Note: Certain Spices or Sugars (Such as German Rock Sugar) will take a while to mix in.
5. When the mixture is constant, pour into a cup/mug larger enough and enjoy! Note: if there is a teabag in the latte still, it would be a great idea to have it removed prior to drinking the latte.
