This Spicy Mexican Rice is full of flavorful and filling vegetables and spices that smell great. You can eat it as a main dish or a side dish with your next Mexican-style meal.
Ingredients: 1 cup rice. 2 cups vegetable broth. 1 tablespoon olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1 cup mushrooms, sliced. 1 can diced tomatoes. 1 teaspoon chili powder. 1/2 teaspoon cumin. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Warm up the olive oil in a big pan over medium-low heat. Put in the minced garlic and diced onions. Saut until the onions become clear. Put in the mushrooms and diced bell peppers. Cook until the vegetables get soft. Add the diced tomatoes, chili powder, cumin, salt, and pepper, and mix them in. Add the vegetable broth and bring it to a boil. Turn down the heat, cover, and let it simmer for 20 to 25 minutes, or until the rice is done and the liquid is gone. Add fresh cilantro as a garnish before serving.
