Wintery Bircher-Muesli
Having grown up in Switzerland I was so used to bircher muesli (in Swiss Birchermüesli) that I never really appreciated it enough until I moved away. Last Christmas I went back to my home country and met up with an old friend in a café. She ordered herself a Christmas bircher muesli and asked me if I would like to try, without big expectations I did and to my surprise, it tasted amazing! When I got home that day I wanted to recreate it again and since then I have made it myself a lot as it nourishing, comforting and tasty!
The key to this recipe and which in my view makes it so Swiss is that you need to have good apples to make it. Not those atomically green Granny Smith ones or some floury cooking apples, I would recommend those little sweet-sour reddish ones.
Ingredients: 1 apple 1 cup of oats 1 tablespoon of chia seeds 2-3 teaspoons of cinnamon 1/2 teaspoon of cardamom 1 teaspoon of runny honey 4-5 tablespoons of yoghurt/ sour milk/ coconut yoghurt/ almond milk half a handful of raisins a few walnuts sprinkle of sunflower and pumpkin seeds
To grate the apple you need a coarse grater like the one you use for potatoes, although in times of need you can also use a normal cheese grater.
Grate one apple into your bowl, add the oats and some chia seeds, mix it well and preferably soak it in the yoghurt for 10 min or even longer, such as in the fridge overnight. Then add the cinnamon, cardamom, raisins and honey to it, mix well again. To top it up you can add walnuts and sunflower & pumpkin seeds.
