Chai spiced breakfast blueberry muffins in the making.
Recipe as follows:
1 cup rolled oats (soaked) 1 cup almond meal 1/2 cup stevia 2 tablespoons cinnamon 1 tablespoon baking powder 1 cup mixed berries (frozen) 1/2 mashed banana 1 cup almond milk 1 egg Vanilla to taste Flaked almonds (optional)
1. Turn oven to 160 degrees. 2. Cover mixed berries with tablespoon almond meal and leave to side. 3. Pour oats into bowl and top with 1 cup boiling water. Next, add the 1 tablespoon cinnamon & vanilla and let sit. 4. Add almond meal, baking powder, second tablespoon cinnamon and stevia to a bowl. Mix to ensure you’ve properly combined. 5. Next, mash banana in seperate bowl, cover with 1 cup milk & mix through egg. Add this to dry ingredients. 6. Add the oat mixture and combine. 7. Quickly stir through berries and try not to over mix. 8. Spoon into cupcake containers & top with flaked almonds (optional) & bake for 15 mins or until golden.
